Mmm...Onion Rings!

I got this book for Christmas and found a ton of recipes I want to try out.

Tall Guy and I really wanted to try the onion ring recipe they gave because it sounded good and it was way healthier than any recipe for onion rings I'd ever seen.

Here's what ours looked like:

Ok, not quite the same, but they tasted really good and were very easy to make.

Here's what you need:
One large onion (we used yellow)
1/3 cup egg substitute (Egg Beaters)
1/2 cup Fiber One cereal
Salt and Pepper

First, cut the onion into about 1/2 inch rings (we ended up cutting ours thinner and wished we had cut them a little thicker). Then, pour the Egg Beaters into a wide, shallow bowl and crush the Fiber One in a food processor or blender until it's bread crumb consistency. Put the crumbs on a plate.

Dip the onion rings into the Egg Beaters, then coat them entirely with the cereal. Place the coated rings onto a baking sheet and bake for 20-25 minutes at 375 degrees.

I was really impressed by how well they turned out. Plus, the recipe for a whole, large onion is only 157 calories! We probably only used about half the onion and it made plenty of onion rings for the two of us.


I also cooked up a batch of Chicken Wild Rice soup that my dad gave us as part of our Christmas present. It's basically a frozen bag of soup, so very non-domesticated people friendly. I can't wait to eat it for my lunches this week! It reminds me of being a kid because we used to sell it as a school fundraiser.

I have that book, but I've actually never tried any of its recipes. I should really look at it again.
